Happy Birthday to Me

This year I decided to make my own birthday dinner instead of going out.  Shocking, I know!

I've been wanting some bbq pork for a while and when I recently came across this recipe for Dr. Pepper pork roast, I knew that was for me!

So I loaded up last years birthday present (which I love) with this year's. :)



It was delish!!  I only added a little bit of the chipotle peppers called for and I left out the brown sugar.  Also, since I saw this "healthy" version of Dr. Pepper on sale at Kroger, I used that instead of the real thing.  I'm trying to not have so many and so the last thing I needed was a 12 pack sitting in my kitchen!  I used two for the recipe and I'll enjoy the other two with no guilt.

I highly recommend trying this.  I'd like to try it with more chipotle peppers, but I'm afraid it would be too spicy, especially for Kate.  She loved it!!  We used the pork to bribe her to eat her mashed cauliflower.

BTW, if you want to make mashed cauliflower seem a little more hearty, like mashed potatoes, I found the trick.  Creamed cheese.  About 1/4 of the package for two bags of frozen cauliflower.  And very little milk or cream added after mashing.  Very little.  After because the cauliflower has a lot more moisture than potatoes.  They were really, really good.

  1. Happy birthday! I am so behind on blog reading, so I am terribly late! I have been very curious about these roasts. We are not big pork eaters (except bacon of course, lol) so I have been to scared to try it.

    1. Amy, it was so, so good. But we like pulled pork a lot anyway. We put bbq sauce on the leftovers and that was good too.
